*D’s Vegan Curry Chilli*
Ingredients
1 can red kidney beans
1 can black beans
1 lrg white onion
1/2C minced garlic
1C raw cashews
2C frozen green peas
2tbsp tumeric
2tbsp curry powder
2tbsp lemon juice
1tbsp EVOO (Extra Virgin Olive Oil)
Directions
Spray the pot with EVOO, add the onion, and saute for 2 mins then add the garlic and spices with lemon juice. Stir, then add teh beans, cashews and peas. Stir. Then simmer it for 30 mins, checking it only once to make sure it’s not sticking. Give it a stir, and let it simmer again, after 30 mins it’s ready.
*D’s Red Kidney Bean Soup*
Ingredients
1 can red kidney beans
1 can lentils
1 lrg white onion
2 tbsp minced garlic
2 lrg tomatoes
1box of veggie broth
1/2C chicken style seasoning
1tbsp basil
2tbsp oregano
1tsp salt
1tbsp EVOO (Extra Virgin Olive Oil)
Directions
Spray the pot with EVOO, add the onion, garlic and spices, saute until onions are translucent. Stir, then add the tomatoes, broth, beans and seasonings. Stir again and simmer for 20 mins.
*D’s Red Kidney Bean Rice Pilaf*
Ingredients
1 can red kidney beans
1 can lentils
1 stalk celery
1 lrg white onion
2 tbsp minced garlic
1 lrg tomatoe
3c water
2c harvest medley rice (brown long-grain will do)
1/4C chicken style seasoning
1/4c tumeric
1/4c curry powder
1tbsp ginger
1tbsp lemon juice
1/4c soya sauce
1tbsp EVOO (Extra Virgin Olive Oil)
Directions
Spray the pot with EVOO, saute the chopped onion together then add the chopped celery and chopped tomato with the beans. Stir in seasonings (to taste) and add the rice and water. Bring to a boil then simmer for a couple hours. Stir it occasionally. This dish tastes best the next day. Note: This dish is VERY filling. 1/2c fills me up!
Just so you know, I do eyeball everything, and taste very often when cooking. I also didn’t write these recipes down until a week after making the dish with some of them, so when following my recipes make sure you’re tasting the whole time. I like to use my nose and mouth when cooking. I have a very good sense of smell, so my theory is "if it doesn’t smell good, it’s not going to taste good!"

wow Demara, you have done a major overhaul job on your blog….what a difference… I am having to learn my way around!!!! It´s lovely!… So off I go to check everything out!
